Ingredients:

Fresh homemade linguine   10 oz.
Olive oil     1 tbsp.
I level tablespoon plain four      1 tbsp.
Skimmed milk      1/2 pint
Frozen peas    7 oz.
Rinned tuna in oil, drained and flaked     7 oz.
Grated Parmesan cheese     2 oz.
Freshly  ground black pepper

Preparation:

  • Heat the oil in a large saucepan mix in the flour and gradually stir in the milk. Bring to the boil over a moderate heat, stirring all the time. then reduce the heat and continue cooking for2 minutes, until the sauce thickens slightly.
  • Add the peas to the sauce and cook for 4 minutes. Mix in the tuna and Parmesan and season with pepper. Heat through gently, without boiling for about 5 minutes.
  • Meanwhile, cook the linguine  for 2-3 minutes and drain well. Serve the linguine in heated bowls. Side salads of grated carrots give a crisp finishing touch.
